Congratulations! You are about to experience an authentic Cajun Fried Turkey! It is the most moist, tender, broad breasted turkey-that has been seasoned with the finest Cajun Spices. We know you are going to LOVE this turkey!


Getting Started

Don't worry if, upon its arrival, your turkey or ham has thawed a bit on the outside & is a little warm to the touch. Before we ship it to you, we keep it at -10 degrees & then we wrap them up real well so it will stay cold deep inside. Our turkeys & hams are fully cooked, you can either keep them in the refrigerator up to 2 weeks or they can be refrozen for up to 18 months. 

Heating Instructions

FRIED, HERB ROASTED, OR SMOKED TURKEYS:

· Thaw in the refrigerator for 24-48 hours.

· 2 hours before cooking, remove turkey from refrigerator and allow it to rest in a pan or the sink with no water at room temperature.

· Preheat oven to 350°. Remove plastic from turkey but leave it wrapped in the foil.

· Place foil wrapped turkey in a pan and heat for 60-75 minutes or until warm.

HAMS OR FRIED TURKEY BREASTS:

· Thaw in the refrigerator for 24-48 hours.

· 2 hours before cooking, remove ham or turkey breast from refrigerator and allow it to rest in a pan or the sink with no water at room temperature.

· Preheat oven to 350°. Remove plastic from ham or turkey breast but leave it wrapped in foil.

· Place foil wrapped turkey in a pan and heat for 30-45 minutes or until warm.

THE TURKEYS & HAMS ARE FULLY COOKED- HEATING FOR TOO LONG- ONLY DRIES THEM OUT!

TUR-DUC-HENS:

Conventional Cooking Method:

· Keep frozen until three days before you want to cook it.

· Thaw in refrigerator for 48 to 72 hours

· Preheat oven to 375° and remove the tur-duc-hen from plastic bag and place in a baking pan.

· Add 1 cup of chicken or turkey broth, cover and bake for 3 hours.

· Remove covering and cook an additional 1.5 hours or until the internal temperature is 160°

· Remove from the oven and let rest for 20 minutes before slicing.

Billy’s Way:

· Keep frozen until three days before you want to cook it.

· Thaw in refrigerator for 48 to 72 hours

· Preheat oven to 375°

· Billy suggests purchasing a large Reynolds Cook bag. It simplifies the cooking process and results in a moister tur-duc-hen.

· Follow the instructions on the cook bag. Add the tur-duc-hen to the cook bag along with 1 cup of chicken or turkey broth

· Seal the bag shut and turn the tur-duc-hen upside down and cook breast down.

· Poke holes in the bag for venting and bake for 4 1/2 hours or until the internal temperature is 160°

· Remove from the oven and let rest for 20 minutes before slicing.

· Carefully cut the bag open-steam will release! Be careful not to burn yourself!

Quick Way to Thaw a Tur-Duc-Hen:

· Remove the tur-duc-hen from box but leave in the heavy plastic bag.

· Place a stopper in the bottom of the sink and place the tur-duc-hen in the sink.

· Cover the tur-duc-hen with cold tap water.

· After one hour, drain the water and refill with cold water.

Continue this process hourly until tur-duc-hen is completely thawed. This could take 5-6 hours. DO NOT EVER USE WARM OR HOT WATER    


After you slice the turkey- you may want to pour some of our World Famous Geaux Juice over each serving. This is especially good for anyone that wants a little more KICK. Recipes & Tips

We Be Jam'n Dip Recipe

1 cup chopped pecans
1/4 cup of mayo
1 cup shredded cheddar cheese
1/2 cup chopped green onion
Combine ingredients and mix well. Then top this mixture with Hot Pepper Peach Preserves.

Fry Your Own Turkey

Tips For Perfect Grilling

1. Clean & pre-heat grill on high before using.
2. Lightly oil everything before putting your meat on the grill. This helps the searing process and prevents sticking.
3. Season all meats before grilling.
4. Sear the outside of steaks when grilling. This helps hold in the flavor and juiciness.
5. Use tongs or spatula for turning. Using a fork can damage and dry the meat out.
6. Cover the grill as much as possible when grilling. This helps lock in the flavor and prevents flare-ups.
7. Keep spray bottle with water handy to douse unexpected flare-ups.
8. Use the 60/40 grill method. Grill 60% on the first side and 40% on the second side for even cooking.
9. Place cooked products on a clean plate. Never use the same plate used to carry the raw product out to the grill. Always thoroughly wash the plate you used to carry the raw meat on.
10. Allow food to rest (5) five minutes before serving. This will help to retain moisture when you cut into it.
