Congratulations! You are about to experience an authentic Cajun Fried Turkey!

It is the most moist, tender, broad breasted turkey - that has been seasoned with the finest Cajun spices. We know you are going to LOVE this turkey.

Our turkeys weight 10-12 pounds, and our turkey breasts weigh 5-6 pounds.

To guarantee quality & safety all of our birds are USDA certified.

Each turkey is injected with orange juice, butter, & real Cajun spices - - we call this "GEAUX JUICE" !! They are then hand rubbed with a blend of dry spices & then allowed to marinate overnight. The turkey is then deep fried in Peanut Oil. The high temperature of the oil - seals in all the juices & locks in the spices. The process creates a unique gastronomic experience. Simply said-it's the BEST tasting turkey you have ever put in your mouth!

 

How to Cook a Tur-Duc-Hen:

Take the thawed Tur-Duc-Hen completely out of the packaging & place in a pan. You may line the pan with aluminum foil. Preheat the oven to 350 degrees. Cook the Tur-Duc-Hen for four & one half hours covered with the legs pointing up & an additional half hour uncovered or until brown. If partially frozen cook for six hours covered & a half hour uncovered or until brown. If partially frozen cook for six hours covered & a half hour uncovered or to an internal temperature of f165 degrees. The internal temperature of a cooked Tur-Duc-Hen should be 160-180 degrees. The internal temperature of a cooked Tur-Duc-Hen should be 160-180 degrees. Remove the woven threading before serving.

 

How to Slice a Tur-Duc-Hen:

Cut the Tur-Duc-Hen long ways from head to butt (you will have to halves). Slice across from leg to leg & wing to wing.

Does the Tur-Duc-Hen Contain any MSG or Preservatives: No. The Tur-Duc-Hen is prepared with all natural products

Can I Deep Fry a Tur-Duc-Hen: No. There are no bones to support the Tur-Duc-Hen

Can I Grill or Smoke a Tur-Duc-Hen: Yes. Set the Tur-Duc-Hen on aluminum foil, so it does not stick to the grill; or set in an aluminum pan. Put a thermometer in the grill. At 350 degrees, place the Tur-DucHen on the grill or smoker & cook accordingly.

Do I need to baste the Tur-Duc-Hen: No. The Tur-Duc Hen is already seasoned & ready to go. However, if you would like to baste l,t feel free, too much of a good thing never hurt!

 

Getting Started

Don't worry if, upon its arrival, your turkey or ham has thawed a bit on the outside & is a little warm to the touch. Before we ship it to you, we keep it at -10 degrees & then we wrap them up real well so it will stay cold deep inside. Our turkeys & hams are fully cooked, you can either keep them in the refrigerator up to 2 weeks or they can be refrozen for up to six months. Since our turkeys & hams are fully cooked, you can eat them either hot or cold. However, the Geaux Juice flows through the turkey meat better if it is warmed. For the best results, let your turkey thaw completely in the refrigerator. Then you can either serve it cold-- or-- for the best results-- follow the heating instructions in the next section.

 

Warming Instructions

Once your turkey or ham is fully thawed- remove the plastic bag. If there is any juice in the bag, pour it in the pan you are going to heat the turkey or ham in, this makes good gravy later. Leave the turkey or ham in the foil it is packaged in. This helps hold in the moisture. Place in a preheated 325 degree oven for about 60-75 minutes. For a turkey breast or small ham, heat for 30-40 minutes. The cooking time will be determined by how cold the meat is.

REMEMBER- THE TURKEYS & HAMS ARE COOKED- YOU ONLY WANT TO WARM THEM. HEATING FOR TOO LONG- ONLY DRIES THEM OUT!

After you slice the turkey- you may want to pour some of our World Famous Geaux Juice over each serving. This is especially good for anyone that wants a little more KICK. Also, if have selected the Lightly Seasoned Cajun Fried Turkey, Geaux Juice is perfect for those that would like their portion a little spicier. Geaux Juice is also excellent for grilling chicken, pork, fish or shrimp!

Since the turkeys & turkey breasts are injected with Geaux Juice- when you slice the meat- you will see the spices, so some parts may be spicier than others.

We Be Jam'n Dip Recipe

1 cup chopped pecans
1/4 cup of mayo
1 cup shredded cheddar cheese
1/2 cup chopped green onion
Combine ingredients and mix well. Then top this mixture with Hot Pepper Peach Preserves.

Fry Your Own Turkey

If you decide to fry your own turkey you will want to order our Geaux Juice Kit - Fry Your Own Turkey Kit, & watch the how-to video in the Videos section. If it looks like more than you can handle make it easy on yourself and order one of Mr. Billy's Cajun Fried Turkeys or complete meals.

Tips For Perfect Grilling

1. Clean & pre-heat grill on high before using.
2. Lightly oil everything before putting your meat on the grill. This helps the searing process and prevents sticking.
3. Season all meats before grilling.
4. Sear the outside of steaks when grilling. This helps hold in the flavor and juiciness.
5. Use tongs or spatula for turning. Using a fork can damage and dry the meat out.
6. Cover the grill as much as possible when grilling. This helps lock in the flavor and prevents flare-ups.
7. Keep spray bottle with water handy to douse unexpected flare-ups.
8. Use the 60/40 grill method. Grill 60% on the first side and 40% on the second side for even cooking.
9. Place cooked products on a clean plate. Never use the same plate used to carry the raw product out to the grill. Always thoroughly wash the plate you used to carry the raw meat on.
10. Allow food to rest (5) five minutes before serving. This will help to retain moisture when you cut into it.

What does that mean for our faithful customers: We hope that we will be able to have more depth in the products that are everyone's favorites, by eliminating some the more fringe products. After analyzing our business for 22 years we saw that 80% of our business was done with 20% of our products. So we will focus more on those signature items you have come to love from us. Real Cajun classics like: gumbo's, ettouffe's, cajun side dishes, classic side dishes, desserts and of course our cajun fried turkeys, tur-duc-hens, stuffed chickens, and honey glazed hams.

We're celebrating our 22nd year this Holiday Season. I can't believe it's been 22 years since I fried that first turkey in my garage. I thank each and every one of you for shopping with me and I'm looking forward to another 22 years.
